Low-Carb Diet Recipes....

I promised Kat, from "JustabeachKat," that I would share a few of my favorite low carb recipes. These two are very tasty, and even if you are not on a low-carb diet, they make a great meal.
I hope this motivates me to get back on my diet!!!
I weighed 117#'s, when I got married...
15 years later....I don't! :)
Okay, maybe that shouldn't be a "smile" but a :(....oh well, it is what it is!


Last June I decided to really buckle down and lose weight, and from June until November, I lost 37#'s.....WOOHOOO!
But then in November, I went on a 7 day cruise, gained a few pounds...not too bad...
Christmas came...gained just a few more pounds, okay, not too bad...

But, then Easter came and I gained a few more pounds...Not so good!
Now altogether, I gained 8-9 pounds back!
....Not so Good!

So, pray for me and my discipline as I try to get back on my diet!

It's not so much a vanity thing, although, as my father-in-law used to say,

"Nothing looks as good on a person, as skinny!"


....But, at 39, it starts to be a health issue!
I'm not obese, but I don't want it get out of control...so I need to start backtracking! :)

If anyone out there has any simple low-carb recipes, I would really appreciate you sharing them with me!



Crockpot Chicken with Cream Sauce


1 Italian Dressing Seasoning Packet

5-6 Chicken Breasts

1 Stick Melted Butter

1 can chicken soup

1 8oz. package cream cheese


Combine seasoning packet, chicken, and butter in a crockpot. Cook on high for 4 hours, or low for 6 hours. Remove chicken and add remaining ingredients to crock pot, mixing well. Return chicken to crockpot and cook on high for 1 hour.


Net Carbs: 2.4 Sugars:.1


This recipe is absolutely delicious! I would eat it even if I were not on a diet! Would be great over rice!

Hamburger Casserole


2 tbsp. butter

2 pounds ground beef

1 cup cottage cheese

1/2 cup sour cream

1/2 cup tomato paste

1/4 tsp garlic powder

1/8 tsp black pepper

6 green onions (opetional)

1 cup shredded cheddar cheese



Fry hamburger in butter until browned. Add onions. Add cottage cheese, sour cream, tomato paste, black pepper, and garlic powder. Heat through. Put in a pyrex dish, top with cheddar cheese and broil until cheese melts.

Hello friend...just came by to say hello and I'm glad I did...the recipes look fantastic especially the chicken one..I shall have to try that one...I too am trying to lose some..I started the end of Jan..but we have so many birhdays in our family every month and then Easter..ohh lordy! lol But I am holding 27 lbs off so far but still need to knock off some more..it's not easy when you love food! lol lol have a great night!

Hi... first time dropping by your blog. I'm always looking for new ideas.... your Crockpot Chicken with Cream Sauce recipe sounds very good. It calls for chicken soup. Is this cream of chicken or chicken noodle? Either would probably be good since you're adding cream cheese... just wondering which you intended.
